Macaroni and Cheese with Lobster, Crab and Shrimp
°4 cups macaroni
°¼ cup of butter
°1 yellow onion, chopped
°2 tomatoes, diced
°1/3 cup all-purpose flour
°4 cups lobster broth
°Salt and pepper, to taste
°2 cups Swiss cheese, Gruyère Valbertou
°1 cup of lobster chair (optional)
°2 cups mozzarella cheese, grated
°2 bed. Italian breadcrumbs
°1 ea. sweet paprika
Cook pasta according to package directions. Drain, then set aside.
In saucepan on medium heat, melting butter, then sauté onion and tomatoes for 5 minutes. Add the flour and cook for 1 minute. Gradually pour in lobster broth, stir to avoid lumps forming. Bring to a boil to thicken the sauce. Season, then set aside.
Preheat the oven to 350°F and place the rack in the middle.
In a gratin dish, combine layers of sauce, macaroni, Swiss cheese and lobster meat. Finish with mozzarella cheese, then sprinkle with breadcrumbs and paprika.
Bake for 30 minutes, then finish cooking under the broiler to brown the cheese.
