Hearty Cowboy Soup Recipe

INGREDIENTS

  • 1 lb ground beef
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 can diced tomatoes 14.5 oz
  • 1 can pinto beans drained and rinsed (15 oz)
  • 1 can sweet corn drained (15 oz)
  • 1 can diced green chiles 4 oz
  • 4 cups beef broth
  • 1 packet taco seasoning
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Shredded cheddar cheese for garnish
  • Fresh cilantro chopped, for garnish

INSTRUCTIONS

  • In a skillet, brown the ground beef with onion and garlic. Drain any excess grease.
  • Transfer the beef mixture to a crockpot.
  • Add diced tomatoes, pinto beans, sweet corn, green chiles, beef broth, taco seasoning, and cumin to the crockpot. Stir well to combine.
  • Cook on low for 6-8 hours or on high for 3-4 hours.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with shredded cheddar cheese and chopped cilantro.
