°6 slices of bacon, cut into small pieces
°3 tbsp. butter
°1 C. olive oil
°2 cloves of garlic, finely chopped
°450g small white mushrooms
°1/2 tsp. chili powder
°1/2 tsp. paprika
°1/2 tsp. garlic powder
°salt and pepper, to taste
°1/4 cup chicken broth
°1/2 cup 35% cream
°1/2 tsp. xanthan gum, optional
In a very hot skillet, cook the bacon until crispy. Transfer to a plate and set aside.
In the same skillet, melt the butter and add the oil. Add the garlic and cook, stirring continuously, for two minutes. Be careful not to burn the garlic.
Add the mushrooms and coat well with the melted butter. Add chili powder, paprika, garlic powder, salt and pepper.
Continue cooking over medium heat for 5 to 7 minutes, until the mushrooms are tender and golden.
Add the broth and cream, stir well and continue cooking for 3 to 4 minutes.
For a thicker sauce sprinkle with xanthan gum and stir well for one minute.
Remove from the heat and add the bacon. To serve.
