Chicken Teriyaki with Mixed Vegetables

 

Chicken Teriyaki with Mixed Vegetables is a delicious and healthy dish, very well known in Japanese cuisine but loved all over the world. This dish combines light, fluffy chicken with a variety of colorful vegetables, all covered in a delicious teriyaki sauce. You can make it at home as follows:

Ingredients
For the Chicken Teriyaki:
2 chicken fillets, cut into strips or equal pieces
Salt and pepper to taste
1 tablespoon vegetable oil
1 tablespoon sesame oil (optional, for extra) flavor)
For the Teriyaki sauce:
1/4 cup soybeans
1/4 cup water
2 tablespoons brown sugar (or more to your taste)
2 tablespoons honey (or more to your taste)
2 cloves of garlic. or chopped
1 small head broccoli, cut into florets
1/2 cup snow peas or snow peas
Garnish:
Sesame seeds
Chopped green onions
Instructions 1. Prepare the chicken:

Season the chicken pieces with salt and salt .
Heat the vegetable oil and sesame oil (if using) in a large skillet or wok over medium heat.
Add the chicken and cook for 6-8 minutes until browned and cooked through. Remove the chicken from the pan and set aside.
2. Prepare the teriyaki sauce:

Add soy sauce, water, brown sugar, honey, garlic and ginger to a pan. Bring to a boil over medium heat and cook until the sugar dissolves.
Add the cornstarch to the pan and cook until the sauce thickens, about 2 minutes. Adjust the taste by adding honey or sugar if necessary.
3. Cook the vegetables:

 

Add some oil to the same pan or a separate pan and fry the vegetables. Start with carrots and broccoli because they take longer to cook, then add peppers and peas. Cook for 3-4 minutes until the vegetables are softened but still soft.
4. Combine chicken and vegetables:

Return cooked chicken to pan with vegetables. Pour the teriyaki sauce over and stir to combine. Cook for another 1-2 minutes so that everything is heated through and coated with the sauce.
5. Serving size:

Serve the teriyaki chicken with hot mixed vegetables. Add sesame seeds and green onion.
Otherwise, open the fried rice or pan completely.
Tip
Switch up the vegetables: Make sure you use all the vegetables you like. Other good options are mushrooms, onions or zucchini.
Special Sauce: Adjust the Teriyaki sauce to your taste. Some prefer a sweet sauce, while others may like a more garlicky or gingery sauce.
