INGREDIENTS
°1 “rack” of about 750g pork back ribs
°1 carrot cut in 3
°¼ onion
°1 stalk of celery cut in 3
°2 crushed garlic cloves
°2 bay leaves
°2 cloves
°125 ml (½ cup) quick BBQ sauce
°Salt, pepper to taste
* Methods :
Using a small knife, lift then remove the membrane that covers the underside of the ribs
In cauldron, placing pork, carrot, onion, celery, garlic, bay leaf also cloves
Cover with cold water (about 1 liter), bring to the boil then simmer over low heat for about 20 minutes
Remove the meat from the cooking liquid (keep the broth for a possible soup)
Pat the ribs dry, place on a baking sheet lined with parchment paper and generously brush all the surfaces of the ribs with the quick BBQ sauce
Bake in a preheated oven at 400°F for 25 minutes, taking care to turn the ribs halfway through cooking.
Remove from oven, cover with aluminum foil and let stand 5 to 10 minutes
